Baked Flounder Fillets in Lemon-Soy Vinaigrette

This recipe can be prepared in 45 minutes or less.

Ingredients:

  • two 6-ounce flounder fillets
  • 1 garlic clove
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Preheat oven to 450°F. Arrange fillets in a ceramic or glass baking dish just large enough to hold them in one layer. Mince garlic and in a small bowl combine with lemon juice, soy sauce, sugar, and salt. Whisk in oil until emulsified and pour vinaigrette over fish. Bake fish in middle of oven until just cooked through and no longer translucent, 5 to 7 minutes.

It’s with great sadness that we announce the passing of our beloved Captain Randy, a true friend and cherished part of our community.

Randy Wayne Boggs, 61, of Baldwin County, AL, passed away on January 2, 2026. He was born August 28, 1964, in Pell City, AL, to the late Clayton Franklin and Georgia Edna Kent Boggs.

Randy was a man of many talents – a journeyman tool and die machinist, a registered nurse and a USCG licensed 100-ton captain. Randy never met a stranger and was always ready to help anyone in need; especially a boat captain that needed that certain part that Randy just happened to have. Of the many captains and deckhands that worked with or for Randy, he has been described as a best friend, a mentor, and a father-like figure. If you worked with Randy, you were not just another employee, you became a part of his family. Randy enjoyed sharing his love of the outdoors with others and always strived to create more outdoorsmen (women) in today’s world. Randy enjoyed sharing his knowledge and stories, especially about his trips to Africa.

Randy is survived by his wife, Susan, and their daughter, Elizabeth; his seven beloved Blue Lacy dogs; his siblings Jimmy Boggs, Joyce Runyans, Billy Boggs and Jane (Dennis) Simmons, and other extended family and friends.

On Friday, January 9, 2026, visitation will take place from 5:00 p.m. to 6:00 p.m., followed by a Celebration of Life at his residence. The burial is scheduled for Saturday, January 10, 2026, at 2:00 p.m. on his farm located in Lowndes County, Alabama.

Mack Funeral Home in Robertsdale, AL is handling arrangements. Please donate to a charity of your choice instead of sending flowers.
