Smoky Citrus Butter-Baked Redfish

Ingredients:

  • 2 lbs Redfish filets, rinsed and patted dry
  • 1 tsp salt
  • Dash Cayenne
  • 2 tsp smoked sweet paprika
  • Juice of one small lemon
  • 3 Tbl finely chopped onion
  • ¼ cup melted butter

Directions:

Preheat the oven to 375 degrees and position a rack in the center. Sprinkle both sides of the fish with the salt, cayenne and smoked Ssweet paprika. Place the filets with the side that once contained the skin facing up. In a bowl, combine the lemon juice, onion and butter. Pour over fish filets. Bake until the fish is cooked through, opaque and flakes easily with a fork–about 15 minutes.
